  • 1 12.5 oz can chicken breast
  • 2 tablespoons sour cream

Instructions:

  1. Add a tablespoon of olive oil to the bottom of a large pot and place it on the stove. Put your stove setting on medium-low heat.
  2. Add the minced garlic, chopped yellow onion, and canned chicken breast into the pot. Continue to add the tomatoes and the corn into the pot and leave these ingredients to simmer together on medium-low heat for about 10 minutes.
  3. Pour in your chicken stock and water into the pot and raise the heat setting to medium-high.
  4. Sprinkle the pepper into the pot, mix the ingredients around for about two minutes, and then wait for the soup to begin boiling. While waiting for it to boil, slice your avocado and set it off to the side.
  5. Lower the heat setting down to low when the mixture begins to boil, which should take about 15-20 minutes. Leave the soup cooking for an extra 10 minutes on low and then remove it from the stove.
  6. Pour the soup into two ceramic bowls. Pour as much or as little Mexican shredded cheese over the top of the soup, followed by a handful of tortilla chips.
  7. Add a few slices of avocado on the top of your soup. You can add as many slices as you want.
  8. Grab a tablespoon of sour cream and add it to the top of your bowl of soup. Because this recipe makes two servings, you can add the other tablespoon of sour cream to the second bowl.

  • 1 4 oz can chopped green chiles
  • 1 12 oz can pinto beans
  • 1 12 oz can tomato sauce

  • 1 16 oz package Mexican shredded cheese

Instructions:

  1. Place the ground beef inside of a saucepan and cook it on medium-low heat until it becomes light brown.
  2. Drain the meat to remove excess oil and return it back to the pan.
  3. Throw your chopped onion, green chillies, and tomato sauce into the pan with ground beef and mix the ingredients around together for two minutes.
  4. Open the can of pinto beans, drain any excess juice from inside the can, and dump the beans directly into the pan. Continue mixing the ingredients until the beans blend in and are covered with sauce. Keep cooking the mixture for about 10 minutes.
  5. While heating your mixture, open the package of tortillas, set them on a plate, and heat them in the microwave for 20-30 seconds. Remove from the microwave and set on a table.
  6. Turn the heat off on your stove after the 10 minutes have passed. Grab a spoon to scoop the mixture and spread it inside the centre of one tortilla. Add a handful of cheese over the mixture and wrap the tortilla up by placing the left side underneath the right side and sealing it closed with your thumb. Continue the process until you run out of meat, cheese, and tortillas. Serve immediately or wrap and keep fresh.

When following this recipe, it should take about 30 minutes to make the meat filling and put the tortillas together. You can also add additional toppings, such as fresh salsa or cilantro leaves, if you want to add more flavors to the dish.
