#1. The pulled mushroom burger

Move aside pork, the pulled mushroom burger is here. Made from king oyster mushrooms, this burger is just as meaty as a pulled pork burger!

The ingredients you’ll need:

  • 1 pound king oyster mushrooms
  • 1 cup barbeque sauce
  • 2 tbsp oil
  • 1 cup vegan mayonnaise
  • 1 head kale, finely sliced
  • 2 carrots, peeled
  • 1 red onion, chopped
  • ½ cup apple cider vinegar
  • 4 tbsp sugar
  • Vegan burger buns like sourdough burger buns

Recipe:

  • Place the whole mushrooms on a hot grill and let them grill for 15 minutes till they start smoking. Let them get darker, but do not let them burn. Once cooled, shred with a fork.
  • Mix the chopped kale, red onions and carrots in a bowl. In a separate bowl, mix the vegan mayonnaise, apple cider vinegar and sugar together. Now, incorporate the vegetables and sauce together to create a beautiful coleslaw.
  • In a saucepan, heat the oil. Add the mushrooms and barbeque sauce and sauté till caramelized.
  • Grill or toast the burger bun, as per your preference. Assemble your burger, and enjoy this vegan delight!

#2. The not-so-fishy garlic lemon fish

Before you get alarmed, this dish is not made using fish! The star ingredient in this dish is the heart of palm, which is basically a vegetable that is harvested from the inner core of certain palm trees.

The ingredients you’ll need:

  • 1 jar heart of palm
  • 1-2 lemons, juiced
  • 3 garlic cloves, crushed
  • ½ cup vegan butter
  • Salt and pepper as per taste
  • 1 teaspoon parsley

Recipe:

  1. Preheat your oven to 375F. Drain the hearts of palm and press them down using a spatula or flat knife. Each heart of palm should look like a fish fillet.
  2. In a frying pan, melt some butter. Now, the hearts of palm into the hot butter and let them cook for 3 to 5 minutes, till they become a nice shade of golden brown.
  3. Place the fried hearts of palm into a baking dish. Add the butter from the frying man, the lemon juice and the garlic cloves into the dish. Sprinkle the parsley, salt and pepper.
  4. Let it bake in a preheated oven for 20 or 25 minutes, till the hearts of palm look nice and bubbly. And it’s ready, a beautiful not-so-fishy fish!

#3. Vegan chocolate chip cookies

Vegan chocolate chip cookies are so good, even London catering companies have selling them now! Chocolate chip cookies are a global favourite, so why should vegans miss out on eating them? This vegan chocolate chip cookie is going to be an absolute hit with your whole family!

The ingredients you’ll need:

  • 1 ¼ cup all-purpose flour
  • 1 cup rolled oats
  • ¼ teaspoon salt
  • Cinnamon, as per taste
  • 1 teaspoon baking powder
  • ¾ cup vegan butter
  • 1 cup sugar, ½ cup brown sugar and ½ cup white sugar
  • 1 teaspoon vanilla essence
  • ½ cup vegan chocolate chips

Recipe:

  1. Preheat your oven at 350F.
  2. In a bowl, mix the flour, rolled oats, baking powder, salt and cinnamon together. In another bowl, mix together the vegan butter, sugar and vanilla essence.
  3. Mix the wet and dry ingredients together. If the dough is a little too tough or dry, add a tablespoon or two of water. Once the dough is ready, add the vegan chocolate chips and mix well.
  4. Make balls of this dough, approximately one or two tablespoons worth of dough should make one ball. Place these dough balls on a greased baking sheet and let them bake for 15 to 18 minutes or until golden brown.
  5. Let the cookies cool for 5 to 10 minutes before serving.
